Turkey Chili

A low fat, lower calorie version of a classic comfort food!


Ingredients:
  • 1 lb of lean ground turkey
  • 1 onion (diced)
  • 3 cloves of garlic (diced)
  • 1 green pepper (diced)
  • 2 Tablespoons Chili Powder
  • 1 Tablespoon Ground Cumin
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt (or to taste)
  • 2 14.5oz cans diced tomatoes
  • 1 15oz can Kidney Beans
  • 1 cup of water (optional)
  • A few cherry or grape tomatoes (optional)
  • Green onions (optional)
Directions:
  1. Place your pot on medium high heat.
  2. Spray the pot with PAM Organic Olive Oil or Canola Oil.
  3. Brown the turkey well breaking it up as it cooks. You may spray more PAM if needed. You don't want the meat to stick. There shouldn't be too much grease to drain if the turkey is lean, but drain if needed.
  4. Add the diced onions and garlic and cook with the meat until the onions are translucent.
  5. Add all the seasons and mix until distributed well.
  6. Pour in the 2 cans of diced tomatoes and a cup of water if needed. Bring to a boil.
  7. Lower the heat to medium and add beans and green peppers. Let simmer for about an hour.
  8. Toward the end of the cooking time I quarter up some grape tomatoes and throw it in for a fresh taste. I also add green onions at this time for the same reason. But again, this is all optional.

Eat alone or with brown rice or a couple of slices of whole wheat bread!
